Vanilla Choc Swirl Microwave Pudding

I don’t really crave sugar anymore. I crave GOOD food. Real food. In saying that, I’m still human and of course crave a little sweet treat after tea. But – sugar free :D Peanut Butter isn’t ever too far away from my snacks and desserts recipes but this time I’ve used PB2 sauce (available from www.iherb.com) which is optional! Enjoy….

Ingredients:Vanilla Choc Swirl Microwave Pudding

Chocolate:

3/4 Scoop of choc sunwarrior protein powder

1 Heaped tablespoon of cacao powder

1/4 Teaspoon of baking powder

1/2 Teaspoon of natvia

2 Teaspoons of coconut flour

1/4 Cup of water

Vanilla:

3/4 Scoop of vanilla vital or plant infused (available off iherb.com) protein powder

1/2 Teaspoon of vanilla extract

1/4 Teaspoon of baking powder

1/2 Teaspoon of natvia

2 Teaspoons of coconut flour

1/4 Cup of water
Extras:

1 Tablespoon of almond milk

1 Teaspoon of cacao nibs

1/2 serve of PB2 sauce (sprinkled with a little natvia and a drop of vanilla extract) – optional
Instructions:

Combine the vanilla ingredients and chocolate ingredients in separate bowls. Dollop the chocolate mix over vanilla and mix carefully to form a ‘swirl’.

Microwave for 1 minute.

Remove and pour almond milk over mixture – do not mix.

Micrwave again for 1 minute.

Remove from microwave. Serve with PB2 sauce (optional) and sprinkle cacao nibs on top.

Other options: 100% Peanut Butter, sprinkle of choc natvia, Almond butter.
