Rise & Shine it’s Pancake time!

WOHOOO! Who doesn’t love pancakes? AND…who said pancakes had to be bad for you? Not my ones!! Well and truly worth the messy clean up after :D (sorry Barry)

Ingredients:Rise and Shine it' Pancake time!

1 Banana (1/2 of the banana mashed)

1/2 Cup of almond meal

1 Tablespoon of natvia

1 Tablespoon of baking powder

2 Scoops of vanilla pea protein powder

Sprinkle of sea salt

1 Cup of almond milk

1 Teaspoon of vanilla extract

1 Teaspoon of cinnamon

2 Tablespoons of coconut oil

Servings:

Banana

100% Raspberry jam

Instructions:

Mash 1/2 of your banana in a bowl. Mix in the almond meal and protein powder. Now add the cinnamon, baking powder, natvia and sea salt. Keep mixing. Combine the almond milk and vanilla extract. Ensure mixture is evenly combined.

Heat fry pan up with some of the coconut oil on medium. Scoop a heaped spoonful of the pancake mix and place in fry pan. I cooked my pancakes one at a time to ensure an optimum flip!

Let pancake cook for approx. 3 min ensuring it doesn’t burn to much. Flip carefully and allow the other side to cook for 2 min.

Repeat for remaining pancakes. Mixture should make 4-5 pancakes.

I served mine with the other half of the banana and 100% Raspberry jam. YUM!!!
