Raw Zucchini Protein Cakes

I’ve always loved zucchini’s; but now, it’s on a whole new level. You’ve seen me use tofu, sweet potato, avocado and pumpkin as ingredients that can easily be masked, well now it’s Zucchini! One of my favourite veggies….How good is this!

Ingredients:Raw Zucchini Protein Cakes

2 Large zucchini’s

4 Medjool dates (pitted)

6 Scoops of chocolate protein powder (as always, I use Sun Warrior Rice base)

2 Tablespoons of 100% organic cacao powder

1 Tablespoon of natvia (optional for sweetness)

1 Cup of water

2 Teaspoons of vanilla extract

Instructions:

Shred zucchini’s in food processor and remove. Grind dates and add remaining ingredients to food processor except for the water. Continue to grind and scrap down the sides whilst slowing adding the water. Mixture should not be runny, but not at all dry either.

Pour mixture into 10 cupcake tins or silicon moulds and keep in fridge.

I have 2x muffins for 1x serve.

Easy, delicious, simply, healthy….It’s a winner!
