Quick and Easy Bean Salad

After a busy day especially if it’s a hot day, sometimes I feel ‘oh I just can’t be bothered cooking’ especially by the oven! So, a great throw together dish ensuring you’re still getting all your nutrients is a fresh veggie bean salad. Just like the recipe says ‘quick and easy’ and actually really filling!

Ingredients:Quick and Easy Bean Salad

Handful of baby spinach

2 Tablespoons of chopped olives (rinse oil off, unfortunately not shown in pic)

2 Tomatoes – diced

1 Avocado – diced

1 Spanish onion – diced

1 Lebanese – sliced and diced

Fresh Basil (however much you want, I usually grab a small handful)- chopped roughly

1 400g tins of 4x beans or chickpeas (I always used 4x bean mix)

Cracked Pepper

Squeeze of lemon

Drizzle of olive oil (no more than 1-2 Tablespoons)

Instructions:

Dice the veggies, mix in a bowl with spinach, add the beans and dress with olive oil and lemon.

The fresh basil and lemon really make this dish more than just ‘a salad’ :)
