Peanut Butter & Vanilla Coconut Clouds


Clouds? Yes, because the texture of these little guys is light and fluffy. Like a cloud! If you didn’t want the peanut butter flavour you could easily take it out and use a touch more coyo yoghurt.

Ingredients:Peanut Butter & Vanilla Coconut Clouds

2 Tablespoons of coyo coconut yoghurt

2 Tablespoons of peanut butter

2 Scoops of vanilla pea protein powder

2 Tablespoons of quinoa flakes (you can use oats alternatively)

4 Tablespoons of almond milk

2 Tablespoons of shredded coconut

2 Tablespoons of water


In a bowl, combine the protein powder and coyo yoghurt. Add the quinoa flakes, 1 tablespoon of the shredded coconut and keeping mixing. Add water tablespoon at a time ensuring the mixture is not too dry. Mix in the peanut butter last.

The mixture should be quite fluffy (not too heavy and not too wet), roll into little ‘clouds/ball’ shapes and roll into left over coconut.

Refrigerate or keep in the freezer! Makes approx. 9-10 clouds.
