Oven Baked Falafels

One of the most common vegan friendly ‘take out’ foods out there are falafels! Except…. as healthy as the ingredients are making up the falafel, they are cooked by getting deep-fryed in oil! One of the reasons why eating out can be so disappointing… SO… I decided to make my own!

Ingredients:Oven Baked Falafels

1 400g can of chickpeas, rinsed and drained

1/2 Onion, roughly chopped

2 Cloves garlic, minced

1/2 Cup of fresh chopped parsley

1/4 Cup of fresh chopped oregano

1/2 Teaspoon of dried coriander

1/2 Teaspoon of ground cumin

1 Teaspoon of turmeric

1/4 – 1/2 Teaspoon of cayenne pepper (depending on desired spice)

1/2 Teaspoon of thyme

1/2 Teaspoon of rosemary

Cracked pepper

Sprinkle of sea salt

1/2 Teaspoon of baking powder

2 Tablespoons of Olive Oil

3 Tablespoons of Almond Meal

1/2 of lemon, juicedFalafels with Cheeze & Salad

 

Instructions:

Preheat oven to 200 degrees, have a baking tray lined with tin foil and sprayed with coconut oil.

Once all your prepping is completed, add drained chickpeas to food processor, then your onion and garlic. Now slowly add the olive oil whilst the blades are still spending.

Mix all the fresh and dried herbs separately with the lemon juice and baking powder and then add to food processor. Sprinkle through the sea salt and pepper.

Scrape mixture into a bowl and mix through the almond meal.

Roll falafel mix into desired size balls and place on baking tray. Mixture should make approx. 9 falafels. Bake for 15-20min checking regularly. Once the top of the falafel starts to crisp and brown up, flip carefully for a further 20min.

Allow falafels to cool once being removed from oven. Serve with my Raw Cheeze and Olive Salad.
