Mini Raw Cheesecakes

Cheesecake recipe that’s clean, raw, and guilt-free? Yes please! These are a great little snack and can be kept in the freezer.

Base:Mini Raw Cheesecakes
1 cup of almond meal (blended almonds)
2 scoops of vanilla protein powder (I use Vital Greens Pea Base Powder)
¼ cup of dates
2 tablespoons of coconut oil
1 tablespoon of descent coconut 

Blend the above ingredients – you can make one big cheesecake or mini cheesecakes by using muffin trays. I use as always silicon moulds as they pop everything out so easily!
Place in freezer

Topping:
200g of silken tofu
1 ½ cup of blueberries or strawberries – or a mixture of both!
1 scoop of vanilla protein powder (pea base – Vital Greens)
Tablespoon of water (slowly added to mixture as the blades are spinning)

Blend ingredients – should be a thick consistency. Spread over base evenly and keep in freezer. 

I even microwave these for 15sec if they are frozen and come out quite nicely! Handy for a ‘sweet’ snack or turn it into a dessert with some homemade ice cream (receipt to come!)

****ALTERNATIVE OPTIONS**** 
– Nut Allergies? Try Coconut Flour or oatmeal. Splash of vanilla extract would also add more flavour!
