Microwave Bowl Brownie

Finally, I have mastered the quick microwave mug muffin – but even better, in a bowl and it’s a brownie – that’s vegan friendly! It’s taken a couple of attempts, but I’ve got it now for you to try. PB2 is from iherb.com approx. $5 but is optional for this recipe. I hope you enjoy!

Ingredients:Bowl Brownie

1/4 Cup almond meal

2 Tablespoons of almond milk

1/2 Tablespoon of natvia

2 Tablespoons of cacao

1/4 Teaspoon of baking powder

Sprinkle of baking soda

Sprinkle of sea salt

1/4 Teaspoon of vanilla extract

2 Tablespoons of coconut oil

Peanut butter sauce (mix all ingredients together and pour over cooked brownie)

1 Serve of PB2 (powder with water)

Drop of vanilla extract

Sprinkle of natvia

Instructions:

Combine in a small microwave safe bowl all the dry ingredients. Mix through the remaining wet ingredients. Coconut oil doesn’t need to be melted but if it’s rock hard, leave out for a couple of minutes to soften.

Microwave on high for two minutes.

Pour PB2 ‘sauce’ over brownie (optional).
