Something I make on the regular and great for a mid morning or afternoon snack. Vanilla protein powder gives it the ‘cream’ and raw cacao nibs give it the ‘cookies’. Yum!!

Cookies & Cream Protein Bar

 

Ingredients:

1 scoop of vanilla protein powder
2 tablespoons of almond meal (almonds blended or you can buy in packets of meal from supermarket)
1/2 tablespoon of peanut butter
1/4 cup of coconut milk
1/2 tablespoon of natvia
1 tablespoon (just under, like 3/4s) of cacao nibs (from health food shops, about $10 and will last atleast a month if you make this dish every week, they act like ‘choc chips’)

Instructions:

Mix peanut butter and coconut milk so it’s smooth. Mix separately the protein powder, almond meal and natvia. Poor the wet mix into the dry mix ensuring all dry ingredients get ‘wet’. It should create a dough like texture. If not, keep mixing as it will gradually form otherwise you may need to mix through a little (and only a tiny bit) of water. Once dough is formed mix in cacao nibs. 

Pat mix into a mini baking tray lined with baking paper or gladwrap. You can use a normal baking dish if you double/triple the recipe and then cut into servings. 

Place into freezer so bar moulds, slice, then keep in the fridge :)
