Clean, Raw Chocolate Cake

Another favourite and guilt free treat of mine. Don’t freak out about the avocado icing, trust me!

250g walnuts
250g hazelnuts
2 Tablespoons of Cacoa powder (not cocoa, there is a difference)
1 Cup of Dates
1 tsp cinnamon
1 tsp vanilla extract

In a food processor, blend nuts until a fine meal. Add Cacoa, then dates. Add remaining ingredients.
Have a feel for texture, the mixture should be able to bind well. If it’s too dry add water slowly as the blades are still spinning. If it’s too wet you can add some almond meal.
Press into a cake tin lined with baking paper. Make sure it’s pressed in evenly and into all the corners. Set in fridge for a few hours or freezer for half hour.

Now it’s time for the icing:
3 Avocados
1/4 cup of cacoa powder
1/4 cup of natvia or stevia – you can use less or more here depending on desired sweetness
1/2 tsp of vanilla extract

Blend all of the above ingredients until a fine consistency, don’t freak bout the avocado!! The other ingredients mask the flavour and you cannot taste it. Spread evenly over cake and pop back in the fridge. I left mine overnight so it had set quite nicely but you could serve after an hour.

You could sprinkle some coconut, slithered almonds, flake almonds, cacoa nibs, coconut sugar, crushed up walnuts anything really over the top to add extra flavour, texture and appearance.
