Choc Coconut Protein Slice

Love thinking of different ways I can incorporate protein into my meals, especially my snacks. Whoever said vegans don’t get enough protein? Pffft. Easy! I’ve used Sun Warrior raw rice protein powder but you can try any!

Ingredients:Choc Coconut Protein Slice

4 Scoops of chocolate sun warrior protein powder

1/2 Cup of organic raw shredded coconut (unsweetened)

1/4 Cup of raw organic coconut flour

1/2 Cup of almond milk (unsweetened)

2 Tablespoons of coconut oil

1 45g bar of sugar-free dark chocolate

1 Tablespoon of natvia

Instructions:

Preheat oven to 200 deg. Line baking tray with baking paper and spray with coconut oil.

Melt chocolate in microwave for 30 seconds. Set aside. Mix remaining ingredients in a large bowl adding the almond milk and coconut oil last. Stir through melted chocolate.

Spread mixture evenly in tray and place in oven for approx 20-30min. Check to ensure mixture doesn’t burn.

Remove from oven and allow to cool completely. Keep in fridge overnight before creating each slice.

Cut into 4-5 slices, keep refrigerated.
