Chickpea Chocolate Fudge Bars (Raw)


Chickpeas? With Chocolate? Yep! Simple as that, chickpeas are another ingredient that can be easily masked with other flavours. I think this recipe would work even better with cooking your own chickpeas but I just used ones from a can. Keep in the freezer and thaw for 15min before serving :)

Ingredients:Chickpea Chocolate Fudge Bars (Raw)

1 Can of organic chickpeas (rinsed thoroughly and drained)

1/4 Cup of almond milk (unsweetened)

3 Tablespoons of coconut oil

1/4 Cup of natvia

Sprinkle of sea salt

2 Teaspoons of vanilla

1 Teaspoon of cinnamon

2 Heaped tablespoons of 100% peanut butter

1 45g of sugar free dark chocolate

1/4 Cup of almond meal

Sprinkle of Cacao (optional)


Whilst the chickpeas are draining, chop up the chocolate bar into ‘chocolate chip size’ pieces and set aside. Ensure chickpeas are drained well and place into food processor. Slowly add remaining ingredients except the milk and the chocolate. Add the milk last. Once mixed thoroughly pour into a seperate bowl and mix through choc chips.

Line square baking tray with glad wrap (use double the amount so you can fold the glad wrap over the mixture) and pour mixture into tray evenly. Sprinkle cacao powder over the top. Now fold the glad wrap so that it’s covering the mixture.

Place in freezer overnight. Remove and allow to thaw for 15min. Slice Fudge into ‘bars’, wrap with individual glad wrap and keep in freezer. Also thaw for 15min before serving.
