Almond & Banana Bread


Who said banana bread had to be full of sugar and off limits? Try my recipe below for a simple snacks during the week. Makes a lovely afternoon snack with a little bit of peanut butter and a cup of tea!



400g almond meal
4 tbsp of coconut oil or olive oil
2 tsp baking powder
4 egg replacers (you can use the orgran brand or try 1x tablespoon of chia seeds & 3 tablespoon of water = 1 egg)
1 tablespoon of natvia
2 teaspoons of cinnamon
1-2 Mashed up ripe banana

Mash bananas in a bowl. Add remaining ingredients. Test taste for sweetness and for texture – should be doughy, not dry but not too wet either.

Line a baking tin with baking powder, fill tin with mixture, bake in oven for 25-35min continually checking and doing the ‘fork’ test.

Let it cool for another 20min, remove from tin.

Great for snacks and if you wanted to try it with a bit of almond/brazil/cash butter or peanut butter it is DELICIOUS!!

Great for Sunday Weekly Cook Up and can easily slice then freeze.
